Somebody here at the Retro Ranch had a birthday right after Christmas — yup, Leo is a Christmas puppy. He’s not much of a puppy anymore though — this year he turned six. It seems like just yesterday I could hold him in one arm! Where has all the time gone?
Now for cuteness overload:
Of course we celebrate Leo’s birthday every year. He gets a new toy, an extra long walk, playtime in the back yard (no matter how cold it is) and I make him a dog cake. Your heard me right — a cake just for Leo.
Leo thinks this is the best thing ever. He loves his birthday cake and the fact that he doesn’t have to share it with anyone else. I don’t let him eat the whole thing in one sitting, I usually cut it into four sections and he gets one section per day until it is gone.
Since I know you’ll ask what is in it, here is the recipe:
Leo’s birthday cake (for dogs!)
- 1 teaspoon baking soda
- 1 cup flour (I use whole wheat flour)
- 1/4 cup peanut butter (I use creamy natural peanut butter)
- 1/4 cup cooking oil (I use canola)
- 1 cup shredded carrot
- 1 teaspoon vanilla
- 1 egg
Mix dry and wet ingredients together quickly. Bake at 350 degrees for 40 minutes. Store in refrigerator.
I have a small round pan that I use just for Leo’s birthday cake. I pack the mix in tightly (it is more like dough than cake mix) and it turns out just perfectly. I’ve heard that you can “frost” this cake with cottage cheese or plain yogurt if you want to go the extra mile and your dog is into that stuff, but I always give this to Leo sans frosting — he doesn’t seem to mind at all!
